The use of regular hot water and chemicals to disinfect or sanitize bottling lines, and barrels results in an excessive amount of water being wasted and poured down the drain and expensive wastewater treatment. Oak barrels are one of the biggest investments a winery.

The use of dry vapor steam machines permits an impressive financial savings on wastewater treatment and chemical use. Typical pressure washers use 680L (180gal) of water per hour, the Bacchus system uses as little as 2L (0.5gal) of water per hour, resulting in a savings of 678L (179.5gal) of water per hour, Tecnovap Bacchus allows for a 99.7% reduction in water consumption and wastewater treatment.

Typical pressure washers operate at only 80ºC (180ºF), where Dupray steam temperatures can be up to 192ºC (378ºF) effectively increasing the kill ratio and lethal dose on bacteria and mould. This is the difference between sanitized and sterilized.

The major benefit of using dry steam (5% humidity) vs a typical hot water pressure washer is the rate at which the heat is transferred or absorbed by the treated surface. Typical "hot water baths" require a great deal of time because it is an inefficient method of heat transfer. The dry vapor steam produced by Tecnovap's Bacchus system allows for an instant transfer of heat to all surfaces that are touched, this significantly reduces the time needed to clean and sterilize equipment.

The use of steam in the bottling line assures a complete kill rate in the whole system from the membrane filter to the fill spouts.

Steam Cleaning The Bottling Line

When compared to hot water or ozonated water, steam is able to provide a far superior efficiency and effectiveness in sterilizing a bottling line, due to the fact that steam is a vapor and it permeates 100% of the bottling line including regions where gravity doesn't allow liquid to reach. The majority of filters are vaporizable, allowing for all of the areas from the filter, all of the stainless steel monoblock, all of the hard to reach nooks and crannies in the bottling line and the spouts to reach temperatures over 100ºC (212ºF) resulting in the sterilization of areas that were not able to be reached before.

The elevated temperature of the steam allows for a much faster cleaning process of the barrels, melting the tartrates in a fraction of the time than it takes with hot water, all while resulting in massive savings in water consumption. The vapor property of dry steam allows for the pores of the wood to be opened, releasing not only tartrates but also old wine and bitter tannins that have been absorbed inside the wood. The whole process revitalizes the wood barrels while being safe on the char of the oak.

The added benefits beyond cleaning are the powerful ability to rehydrate the oak barrels during storage and also the cleaning process creates a natural vacuum on the barrel, after inserting a bung into the hole you will be able to quickly test the barrel for leaks.

After only 15minutes the tank is completely sterilized without the use of caustic or other harsh chemicals.

Sanitizing Tanks and Removing Tartrates

Tartrates and other substances commonly cling to the walls of storage tanks, with the simple connection of the Bacchus system to the storage tank the steam melts away all residues and tartrates and the condensation allows for them to drain out the bottom of the tank. A quick rinse with cold water causes a thermo-shock removing any remaining residue from the walls. After only 15minutes the tank is completely sterilized without the use of caustic or other harsh chemicals, greatly reducing water consumption wastewater treatment.
